Courtney Schnabel is a Registered Dietitian working with the New York University Comprehensive Epilepsy Center. Ms. Schnabel started her nutrition career undergraduate at Syracuse University, earning a Bachelor of Science in Nutrition and Dietetics. After graduation she fulfilled her required supervised practice internship gaining experience in medical nutrition therapy in several area hospitals. After completion of her internship, Ms. Schnabel began her career as a Clinical Dietitian working with adult and pediatric patients at New York University Medical Center, eventually earning a Master’s degree in Clinical Nutrition from New York University. During her time at NYU Medical Center, Ms. Schnabel developed a strong interest in pediatric nutrition, ultimately deciding to focus her work in Pediatrics. While working with the pediatric population, she gained experience implementing and monitoring the Ketogenic Diet and other nutrition therapies for Epilepsy. Her experience with these diet therapies fueled her interest and encouraged Ms. Schnabel to focus her efforts in this highly specialized area of nutrition. She recently transitioned into a new role as the Registered Dietitian Coordinator at the NYU Comprehensive Epilepsy Center to work primarily with nutrition therapies for Epilepsy. Ms. Schnabel is currently working to promote and refine these therapies in both adult and pediatric patients at the medical center and the Comprehensive Epilepsy Center.
