Kale Salad


  • 1 large bunch of kale
  • Juice of 1 fresh lemon
  • 3 tablespoons of extra virgin olive oil
  • ½ cup chopped walnuts
  • ¼ cup chopped dried fruit of your choice
  • salt and pepper to taste
  • optional: parmigianino regianno cheese


  1. Tear kale off the vein into bite-sized pieces and place in a mixing bowl
  2. Coat leaves with lemon juice, olive oil, walnuts and dried fruit
  3. Season with salt and pepper
  4. Massage leaves in dressing for a few minutes
  5. After the kale mixture has marinated toss and serve
